What is liang (lee-ong phen) and why would you eat it???? Well, you’re about to find out! This dish is famous in an area around here named Shigu or “Stone Drum”. It is a cold noodle dish and it starts from a type of pea starch and is left to set in metal bowls like this:
Next, it is cut into strips and topped with these side veggies and sauces: radish, green onion, cilanto, numbing-pepper oil, red chilie paste, soy sauce, vinegar, and or peanuts.
Then, you eat and enjoy! This spicey, sour noodle has a rice noodle or Japanese udon noodle texture.
Pea starch! not sure I can find that at Super One. May have to stick to split pea soup
